Yields: 9-12 dinner rolls Prep time: 15 minutes Cook time: 50-60 minutes

Ingredients:

  • 1¼ cups super-fine almond flour
  • 5 tablespoons ground psyllium husk powder (ensure it’s a fine powder, not whole husks)
  • 2 teaspoons baking powder
  • 1 teaspoon sea salt
  • 2 teaspoons apple cider vinegar or white wine vinegar
  • 1¼ cups boiling water
  • 3 large egg whites (from approximately 3 eggs)

Equipment:

  • Large mixing bowl
  • Hand mixer or stand mixer with whisk attachment
  • Small scoop (e.g., ice cream scoop or large cookie scoop) or moist hands for forming rolls
  • Baking sheet
  • Parchment paper (optional, for easy cleanup)
  • Nonstick cooking spray or a light greasing (for baking sheet)

Instructions:

  1. Preheat Oven & Prep Baking Sheet: Preheat your oven to 350°F (175°C).
    • Lightly grease a baking sheet or line it with parchment paper for easier cleanup.
  2. Combine Dry Ingredients: In a large mixing bowl, whisk together the almond flour, ground psyllium husk powder, baking powder, and sea salt. Ensure all dry ingredients are thoroughly combined.
  3. Prepare Wet Ingredients & Combine with Dry: Bring 1¼ cups of water to a rolling boil.
    • While continuing to beat the dry ingredients with a hand mixer on medium speed, carefully pour in the boiling water, followed immediately by the apple cider vinegar (or white wine vinegar), and then the egg whites.
    • Continue beating for about 30 seconds, just until the dough comes together and resembles a play-dough consistency. Do not overmix the dough, as it can become too stiff. It should be pliable but not sticky.
  4. Form the Rolls: Use a small scoop to portion out the dough, or moisten your hands to prevent sticking and form the dough into 9 or 12 individual rolls. Aim for uniform size for even baking.
    • Place the formed rolls on the prepared baking sheet, leaving some space between each.
  5. Bake: Place the baking sheet on the lower rack in your preheated oven.
    • Bake for 50-60 minutes, depending on the size of your rolls. The rolls are done when they are golden brown on the outside and sound hollow when tapped on the bottom.
  6. Cool & Serve: Remove the rolls from the oven and transfer them to a wire rack to cool slightly before serving.
    • Serve warm with butter, low-carb gravy, or your favorite keto-friendly toppings.
    • Store any leftover rolls in an airtight container in the refrigerator for up to 3-4 days, or in the freezer for longer storage. Enjoy!

Tips for Success:

  • Psyllium Husk Powder: Ensure you use powdered psyllium husk, not whole husks, for the correct texture and absorption. Different brands can absorb liquid differently, so slight adjustments may be needed.
  • Boiling Water: The boiling water is crucial for activating the psyllium husk and creating the right dough consistency.
  • Don’t Overmix: Overmixing the dough once the wet ingredients are added can make the rolls dense or crumbly. Mix just until combined.
  • Moist Hands: If the dough is a bit sticky, moistening your hands slightly when forming the rolls will help prevent sticking.
  • Tapping for Doneness: Tapping the bottom of the roll to hear a hollow sound is a classic test for doneness in bread. They should feel firm to the touch.
  • Storage: These rolls keep well. Reheat in a toaster oven or microwave for a fresh-baked feel.
